Boma, the restaurant opened in Vannes by Claire Baudais and Maxime Brullé, is the story of both a love affair and an encounter. Born in Rennes in the mid-1990s, Claire Baudais was a late convert to the restaurant business. Her parents didn't come from a restaurant background, although she does admit to having an uncle who was a MOF chef (Jérôme Le Minier, class of 2004, now working in the French Senate). "Come to think of it, even if I didn't realize it when I was a child, having an uncle who was a MOF is quite unusual," she confides.

The young girl went on to pursue her classical studies, obtaining a master's degree in wealth management and working for a few years as a real estate tax exemption specialist.But then came Covid, and like many people during this troubled period, Claire Baudais realized that she was not passionate about her profession. "What I already loved was entertaining, eating well and tasting fine wines. I took a skills assessment, which convinced me to take a CAP (vocational training certificate) in cooking, with the aim of opening my own restaurant, working in the kitchen or the dining room - I hadn't made up my mindyet . "

Boma, or the story of a double crush

It was during an internship at Brume, one of Rennes' finest restaurants, that Claire Baudais and Maxime Brullé met. It was love at first sight, and the idea of opening a restaurant suddenly made perfect sense. "Maxime is much more talented than I am in the kitchen, and I'm much more at ease than he is in the dining room.When we stumbled across this restaurant for sale, it was love at first sight all over again." Opened in April 2024, Boma quickly became a success thanks toeffective word-of-mouth. "Our customers are really delighted.Maxime is alone in the kitchen, although an apprentice will be joining him in September, I'm alone in the dining room, but we limit ourselves to 18 covers to make sure we offer great service. "
