Their sober, classic cuisine is not lacking in allure, and toques are rapidly piling up on this house that seems to brave the ocean.The arrival of the youngest son, Christopher (Grégory, the eldest, is also a successful chef, a little further along the port), will propel the house into a new dimension.
Partnered with Nicolas Brossard, who reigns over the dining room, Christopher Coutanceau will definitively succeed his father in 2007. Never stingy with his efforts, this ocean smuggler, capable of looking at fish through their gills and understanding them, now offers one of the finest marine cuisines in existence. A committed and responsible fisherman, gatherer and marine chef, he didn't wait for expert reports to raise concerns about the environment and species protection. Christopher Coutanceau knows fishing and fishermen, which gives him a head start, and he takes the good option of privileging the product for itself, simply magnified, barely touching it.
