Chef : 1 restaurantChristophe Bocquillon turned to cooking by chance. "Insecondary school, when it came to choosing a career path, a friend told me he was going to go to a catering school. I did the same, so that we'd be at the same school. In the end, he stopped, and I carried on," he recalls. During his studies in Sedan (Ardennes), he completed several internships: one at the Armes de Champagne hotel in L'Épine (Marne), one at the Hostellerie de Levernois and another in Beaune, with Bernard Morillon. "That's where I discovered the trade.
In 2003, he returned to Levernois as a commis, then headed for Marseille to join the brigade at Une Table au Sud, working with Lionel Lévy. In less than two years, he progressed from commis to chef de partie and was promoted to second-in-command. When he arrived at Le Jardin des Remparts in Beaune in 2007, he never expected to become the owner a few years later. "I had told Roland Chanliaud that I wanted to have my own restaurant. Two years later, on returning from a visit to an establishment, he suggested I take over his." After some thought, he accepted the offer, and thus became master of the premises in 2013.
In 2021, the chef is looking forward to simplicity. "I wanted to have the star removed, but the guide refused. So I closed Le Jardin des Remparts, and opened Garum in its place." Since then, he's been offering a no-nonsense, no-fuss bistronomic cuisine. A bold choice that was rewarded with 2 toques and the Terroir d'Exception Bourgogne-Franche-Comté 2022 trophy.
