Chef de service : 1 restaurant Winner of the Accueil Auvergne-Rhône-Alpes 2025 award, Carole Chabran has been looking after her customers at Le Quai in Tain-l'Hermitage for over 15 years.When you bear such a surname, it's inevitably difficult to escape a straightforward destiny. However, the daughter of the great Michel Chabran - and of Rose-Marie, still active at the restaurant in Pont-de-l'Isère - didn't immediately choose to go into the restaurant business. "Of course, I've always been surrounded by this atmosphere. My grandparents opened the restaurant in 1936, on the banks of the Nationale 7, the year paid vacations were introduced. It was a former coaching inn, and today my brother Louis is at the helm," says Carole Chabran.
After working at Potel et Chabot, back to the roots
The establishment was then called Le 45e Parallèle, and it was within its walls that Carole Chabran grew up. She went on to study at the Lausanne Hotel School, before turning to event management for ten years. "It was a happy time for me, as I traveled a lot and partied a lot too. I worked for Potel et Chabot for several years. But I wasn't really earning a living, and when I was in my thirties, my father opened my eyes and convinced me to join the family fold."
A heritage of hospitality
in Pont-de-l'Isère, she developed the catering business before getting the opportunity to take over the Rive Gauche in Tain-l'Hermitage. "Pierre Reboul, whom my family knew very well, was the seller. We bought the restaurant in 2007, and it became Le Quai. My first child was born almost at the same time, so it was an eventful year! "Fifteen years later, Carole Chabran is still at the helm of this pretty restaurant on the banks of the Rhône, where her sense of hospitality, which she says she inherited from her mother, works wonders every day. Gault&Millau awarded her the Accueil Auvergne-Rhône-Alpes 2025 trophy.
