But that's how the story of Quentin Pellestor-Veyrier and Camille Hubert began : "It was in 2022, during a dinner at the Pourcel brothers' home . I was working in the service department at the time, Quentin was one of the prizewinners, and we got to know each other that evening, thanks also to the kindness of Gilles Goujon, with whom Quentin had worked for a long time, and who acted as our matchmaker. "

Camille grew up in Valenciennes before moving to live with her grandmother in Montpellier at the ageof 18.She worked for a long time for one of the region's leading caterers, before joining the Pourcel brothers , then spending several seasons at the K2 in Courchevel - "where the manager taught me everything " - and at the Café Dior in Saint-Tropez. "Quentin and I had lost touch after our first meeting. We ran into each other again at L'Alter/Native, in Béziers, and then Quentin askedme to joinhim in the adventure of his restaurant, which he was in the process of creating in Colomiers. "
Camille Hubert, enthusiastic about the project, took the plunge and completely rethought the layout and décor of the place where Yannick Delpech had made his name. "We chose to work on the red brick theme, which is usedextensively throughout the restaurant.We opened at the beginning of February 2025, and we're delighted with the three toques that arrived so quickly."
