Chef : 1 restaurantArnaud Philippon went into the restaurant business more out of reason than passion, "I had to find a job," he says. Luckily, the trade has stuck with him ever since. He first discovered the business at Hôtellerie de Rosenmeer, in Alsace. "I was quickly given responsibilities, and was able to learn a lot in those two years," he recalls.
Then the desire to discover new houses pushed him towards Brittany. So, for two years, he spent winters in Brest and summers at the Hôtel de la Plage near Sainte-Anne-la-Palud (Finistère). "In 2007,he moved to Brussels and settled in at Comme Chez Soi for two years. "It was a city restaurant, so it was all new to me."
Since then, Arnaud Philippon has worked at the Hostellerie du Château de Pray, near Amboise (Indre-et-Loire). Having arrived in 2010 as Frédéric Brisset's second-in-command, he has worked as head chef since 2016, and has managed to maintain the attractive 14/20 rating awarded by Gault&Millau. "As long as I have people around me, that keeps me going, it's a human adventure above all."
