He was born in Bhopal, in central India, a city marked in 1984 by the Union Carbidechemical plant disaster . He discovered cooking through his family. “ My father cooked a lot, ” he recalls. “ He is undoubtedly the source of my passion.” He earned the equivalent of a BTS in India and worked in several major hotels.
Arrival in France
At age 21, he joined the Hôtel de l’Europe in Horbourg-Wihr, where he met Virginie Jacquet. The couple went on to work at a series of renowned establishments: the Relais Bernard Loiseau in Saulieu, the Côte Saint-Jacques in Joigny, the Ferme Saint-Siméon in Normandy, and then five years at the Moulin de Mougins under Erwan Louaisil. Next came La Flibuste, the Negresco, a return to Saulieu, and their first stint as head chefs at the Domaine de Roncemay, from 2022 to 2024.
The couple took their time finding the right location. “We visited 60 or 70 restaurants before making up our minds, ” explains Anish Chourey. “And we finally decided to take over the Relais des Ménétriers. We welcomed our first guests in March 2026.” Their cuisine is technical and precise, and Indian spices are always a key element. The restaurant was awarded two toques.
