Alexandre JUTON
Chef : 1 restaurant Crowned Jeune Talent de Bretagne (Young Talent of Brittany) at the helm of his restaurant Inspirations, Alexandre Juton has made a name for himself on the Vannes culinary scene.The son of a mechanic and a commercial secretary, Alexandre Juton didn't immediately embrace a career in cooking. Of course, his grandparents were market gardeners on the one hand, farmers on the other, and the young boy spent a lot of time with them, feeding pigs, planting leeks, harvesting tomatoes.
"I was a good student and didn't really know what I wanted to do with my life," he confides. I went to the lycée général and got a bac S, but when it came time to choose my direction, I realized that my greatest passion was cooking. I came close to going to Ferrandi, but backed out at the last minute and enrolled at the Lycée Hôtelier in Saint-Nazaire. The best decision of my life, without a doubt."
After the Bac S, an accelerated refresher course and some great experiences
There, he followed an accelerated refresher course, obtained a BTS, and did internships at Loiseau with Patrick Bertron - "a magnificent experience" - and at Loiseau with Patrick Bertron. "a wonderful experience " - and at Michel Guérard - "I mainly worked on slimming meals". The young man then decided to move to Paris and joined Julien Roucheteau at the Lancaster, where, he says, he "really learned to cook", working both for the gastronomic table and for room service.
In Switzerland, he joins one of the world's top restaurants
"I was then lucky enough to enter the legendary Restaurant de l'Hôtel de Ville, in Crissier. It was a different world, with competition cooking on a daily basis, never the slightest room for error, pressure at every turn, but a real sense of camaraderie and solidarity among the cooks. After two years in Switzerland, my partner Élise and I left to work in Australia the day after Benoît Violier died. A tragic coincidence..."
A promising start in Brittany
After two years on the other side of the world, followed by a few months in Switzerland, the couple decided to settle down. "We were looking for Brittany, in a town on a human scale. We bought Braise Beef, in Vannes, and opened Inspirations at the end of 2023, after a six-month renovation. We're off to a promising start, and this Jeune Talent trophy is a real boost for our restaurant."
