Sommelier : 1 restaurant A sommelier at heart since his early days, Alexandre Dathy now expresses the full extent of his creativity in the menu of 49R, which he opened in Lille in 2021.
Presentation

"Being there for customers, helping them out, has always been part of the family spirit," says this son of shopkeepers. Alexandre Dathy took a CAP in hotel and restaurant management as soon as he could, followed by a vocational diploma. He graduated from the CFA in Wattignies four years later, and speaks of his trainer, Bruno Treffel, as a true pillar: "Everything started with him." In 2008, he went on to complete a sommelier diploma at the Lycée Hôtelier Michel Servet in Lille. During his apprenticeship, he worked with local chefs such as Benoît Bernard and Anthony Chevalier at La Part des Anges.

From 2009, Alexandre Dathy set off to discover different regions, from the Yvelines to Provence: "I always chose places that were close by and interesting in terms of oenological discoveries". In 2012, he returned to Lille, to La Part des Anges, as manager, before joining Steven Ramon at Le Rouge Barre, where he spent seven years.

During the period of confinement, Alexandre Dathy and his partner Constance seized the opportunity to reclaim the third oldest private mansion on Lille's Rue Royale. The couple transformed it in their own way and, in 2021, 49R opened its doors. Here, the sommelier can concretely develop his creativity: "I've been able to express myself even better on the wine list, to look for things that are a little less conventional, more confidential, and so on. "A menu whose richness and relevance are now indisputable, earning him the Sommelier Hauts-de-France 2023 trophy.
