Chef : 1 restaurant Owner of the legendary Escalier de Grenoble, Alexandre Aymard distills his talents here, from cellar to kitchen to dining room.I was born into cooking," says Alexandre Aymard, whose parents ran the Bellevue hotel-restaurant in Saint-Martin-le-Vinoux (Isère). After initially taking a DUT in mechanical engineering and production engineering, the young graduate realized that he missed cooking deeply. He retrained as a manager in supermarket distribution, then in gastronomy.
"In the end, the best way for me to get back on track with cooking was to manage an establishment." In 2016, Alexandre Aymard bought L'Escalier, a Grenoble institution for nearly four decades, and in line with his values: "sincere local cuisine in a chic, caring atmosphere". From the dining room to the cellar to the stoves, the young entrepreneur is everywhere.
Supported by chef Erwan Le Bourdonnec, he carries on the house tradition of Alain Girod, initiator of the famous "Menu Cuillère": two different preparations of a dish in two silver spoons on a plate, served seven times. From the outset, the two men have climbed the stairs of L'Escalier together, hand in hand, to sublimate the region's products, according to each guest's desires.
