Chef : 1 restaurantIn the Dumonet family, I'd like the son! Born in 1994, Adrien is the grandson of Jean, who bought Maison Joséphine on rue du Cherche-Midi in Paris in 1955. He is also the son of Jean-Christian, who took over the business, and the nephew of Jean-Louis, a restaurateur based in the United States. Today, it's Adrien's turn to take the reins in the kitchen.
However, long before he got the job, his father encouraged him to choose a different direction. But the young man persisted in his decision, especially after an internship with his uncle at Taste of France in New York. Instead, he opted to study hotel management and restaurant management. After three years in La Rochelle, then Vietnam, he returned to France in 2017 to launch the restaurant Le Toit de la Grande Arche, in La Défense, with his father. "It was my first job, I was just out of school, I was 23. The concept was different from what we were offering at home; it was more seasonal, bistronomic", he explains.
The experience lasted a year, and then the young man decided to join the family restaurant team. Since 2019, he has been the second in command, gradually taking over the kitchen. "It's not easy without a basic education," admits the man who grew up just above the restaurant. His aim: to offer the same recipes "without any fuss on the plate" and preserve the family heritage.
