From Reims to London: a career that's taking shape
Under the wing of Antoine Werlé, MOF Service des arts de la table and teacher at the Lycée hôtelier, Adrien progressed rapidly. His high standards opened the doors to Les Crayères in Reims, where he completed his internship at the same time as Philippe Mille took charge of the kitchens. To broaden his knowledge, he then crossed the Channel and joined the Texture restaurant in London. The cellar, more international than that of Les Crayères, enabled him to open up to new horizons. "When I returned to Paris, I joined Pierre Sang's team, where I stayed for six years. Together, we built up one of the finest cellars in Paris, always with the aim of being accessible to the widest possible clientele . Then I had the opportunity to join Julien Boscus at Origines. "
Autumn as a source of inspiration
His stint at Origines was only supposed to last a few months. In the end, the experience was extended. " I've been working with Julien for over a year and a half now. He's a hard worker, present at every service, and strives to offer menus and a menu that are frequently renewed. I love his cooking and I'm gradually developing his cellar. My favorite season? I'm a great hunter, so it's autumn: mushrooms, game... these are products that particularly inspire me. "
