Sylvestre Wahid opens a new address in the heart of Provence

At the beginning of May 2026, chef Sylvestre Wahid took over Mas de l'Amarine in Saint-Rémy-de-Provence. The guesthouse features two dining areas.

Sylvestre Wahid is embarking on a new project. A few months after a fire destroyed his restaurant in Courchevel, the chef is taking over an emblematic address in Saint-Rémy-de-Provence: Mas de l'Amarine. This guesthouse is divided into several areas, including two restaurants with very distinct universes, as well as six rooms for extended stays.

A house first and foremost

Mas de l'Amarine is a place steeped in history. Built at the end of the XVIIIᵉ century, it attracted many artists, from painters to composers, before becoming a guest house in 2011. Today, Sylvestre Wahid continues in this vein, offering six rooms, each named after a nephew or niece, with generous volumes, open living rooms and views of the Alpilles or the garden. The 5,000 m² garden features a heated swimming pool, pool house and stone basin.

One place, two restaurants

Sylvestre Wahid has not forgotten his fundamentals, offering not one, but two restaurants in his new setting. The first, called Le Sylvestre, is a gourmet restaurant where the Alps and Provence come together on the plate. The space is divided between a main dining room, a private lounge and a table set in a cellar dug into the rock. The chef offers three menus: Le Végétal in 6 sequences (195€); Le Découverte between voyage and pleasure in 8 sequences (295€); or Le Signature SW in 10 sequences (350€). All can be accompanied by a wine and food pairing or a non-alcoholic range of infusions and fermented beverages.

from June 2026, the chef will inaugurate his second table. It will be a restaurant, Alya's Garden, offering a freer, French cuisine, tinged with Pakistani and Asian influences, designed for sharing. On the menu? Socca with candied onions and anchovies, a fine tart with tomatoes from Provence and sardines, grilled eggplant lacquered with red miso, yellow Landes poultry marinated in massala or raw Mediterranean tuna. For dessert, gourmet proposals such as chocolate naan soufflé or red fruit pavlova should delight sweet tooths.
