For twenty years, Pierre Hermé's "Infiniment Vanille" has enchanted lovers of this spice the world over. But behind this cult creation lies a passionate quest for the absolute taste of vanilla.

In 2005, Pierre Hermé launched a unique creation, a veritable ode to vanilla, which has now become one of the signatures of the Maison Pierre Hermé. It is celebrated through an exclusive anniversary collection, available in just a few days.

The history of this iconic flavour

the origin of this creation lies in Pierre Hermé's desire to create the perfect vanilla: "For a long time, I searched for my absolute vanilla taste. I was able to enjoy a multitude of beans from different origins in search of the vanilla taste of my dreams, without ever finding it."

After discovering the work of painter Yves Klein, renowned for his blue monochromes, the pastry chef had the idea of mixing vanillas to reveal all the facets of this very special spice.the result is this famous flavor, created by blending equal parts of three exceptional vanillas:

  • mexican vanilla, floral and chocolaty
  • madagascar vanilla, woody with notes of licorice and dried fruit
  • tahitian vanilla, full-bodied, powerful and slightly aniseed-flavored

20 years of Infiniment Vanille flavour

For the past two decades, this "absolute vanilla" has continued to arouse emotion through the chef's sweet creations. Most notably, it can be found in a signature tart, available all year round, featuring shortbread dough, a cookie soaked in vanilla juice, vanilla white chocolate ganache and vanilla mascarpone cream.

To celebrate its twentieth anniversary, Maison Pierre Hermé is devoting an entire collection to it, available until October 22. It features a range of reinterpreted pastries: paris-brest, saint-honoré, éclair, baba, millefeuille, cake, macaron, croissant...
