The Finistère-based chef explains that the hiatus decided upon in early July was primarily due to constraints related to the extreme heat, but that it has also provided an opportunity to engage in a more in-depth reflection on the future of the family-run establishment. A decision will be announced at the end of September 2026.
A Closure During the Heat Wave
The gourmet restaurant closed at the end of service on July 5. After several weeks of exceptionally high temperatures, the chef determined that conditions no longer allowed him to maintain the level of quality his clientele has come to expect. Initially planned to last about two weeks, this hiatus was ultimately extended to allow for in-depth reflection.
A Family and Personal Reflection
This period of reflection comes at a particularly significant time for the chef. The retirement of his mother, who worked alongside him for many years at the restaurant, marks an important milestone in the history of this family-run establishment. Added to this are the investments needed to modernize the restaurant, as well as a more personal reflection on the conditions under which Olivier Bellin wishes to continue his career. “L’Auberge des Glazicks is inextricably linked to my family history. This break has allowed me to step back and look toward the future with clarity. At 55, it seems healthy and responsible to me to reflect on the direction I now wish to take, ” the chef shares.
An announcement expected in late September
However, Olivier Bellin emphasizes one point: no decision has been made yet. He says he is continuing discussions and exploring various options before making an official announcement about his future and that of the Auberge des Glazicks, adding that he will provide more details at the end of September.
Until then, the Auberge des Glazicks hotel continues to welcome guests. Dining options are available upon request for guests staying at the hotel. Guests who have reserved a table at the fine-dining restaurant or purchased a gift certificate are being contacted individually so the establishment can assist them.
