The chef of Pantagruel in Paris received the Trophée Grand de Demain during the Gault&Millau Tour Paris Île-de-France on Monday, September 7, 2026, at the Orangerie d'Auteuil.

Under the leafy canopy of the Orangerie d'Auteuil, Gault&Millau unveiled its list of top-rated restaurants in the Île-de-France region before an audience of culinary professionals gathered for the occasion. Among the most anticipated awards, the 2027 Trophée Grand de Demain was presented to Jason Gouzy, chef at Pantagruel in Paris (3 toques), by Juliette Champion, representing Robur. This is a major recognition for this young Parisian chef, who has also earned a third toque in the guide. “Yes, it’s really cool, he says, “I’m thrilled.” This distinction is all the more valuable given that the Île-de-France region—where “there are more competitors” than elsewhere—remains one of the most competitive in the guide.

A Confident Second Chapter

Opened in 2019 with his partner, Pantagruel moved last year from Rue du Sentier to Rue de Richelieu—a shift in scale that the chef fully embraces. “ We’ve shifted gears and expanded our scope,” he summarizes, describing a space designed “for a clientele that’s no longer that of a bistro, but of a chic restaurant.” A new chapter he himself defines as “Version 2” rather than a break with the past.

The Magic of Imperfection

A self-proclaimed chef-owner, Jason Gouzy champions a style of cooking where every element must have a purpose. “Everything on each plate must be relevant; otherwise, it’s pointless, he explains. This high standard doesn’t preclude taking risks: “It’s in the mistakes that the magic of a restaurant lies, the chef remarks, convinced he has now found his path. “I think I’ve found my niche, he confides, before adding, regarding the experience he hopes to offer his guests: “I’m almost certain you’ll have a wonderful time here.”
