Alexandre Couillon signs the menu for the new Puy du Fou restaurant

The new culinary signature of the Puy du Fou theme park is a real eye-catcher. Since April 28, 2026, Alexandre Couillon, chef at La Marine restaurant (5 toques) in Noirmoutier, has been designing the menu for the Auberge, the theme park's emblematic dining venue. It's an unexpected collaboration between a chef attached to his terroir and a site known for its spectacular historical frescoes.
Cuisine at the service of history
In his restaurant on the island of Noirmoutier, Alexandre Couillon has built a strong identity around the sea, raw produce and sensitive cuisine. His arrival at the Puy du Fou is not a change of course, but rather an extension of his universe. At L'Auberge, the 2017 Chef of the Year has devised a menu that highlights local produce and the flavors of the Vendée region, while retaining his high gastronomic standards.
In this new restaurant, Alexandre Couillon has imagined a more direct cuisine, designed for the general public, but always guided by respect for the product, precision in cooking and emotion on the plate. For example, the chef proposes a runny egg with almond milk, accompanied by snails and a butter scented with nettles and parsley. Fish, local meat and vegetables also feature prominently on the menu, with products selected from 20 to 30 kilometers around. The Auberge now offers two menus: the "Diligence" at 57 euros and the five-course "Dégustation" at 72 euros.
More than a simple collaboration, this signature illustrates a broader movement in French gastronomy: that of opening up great chefs to cultural or tourist venues, where cuisine becomes an integral component of the overall experience. A way of prolonging the show, right down to the plate.
