It's a fine selection of cheeses from all over France, respecting seasonality and championing fine affinages: comté 18-24 months, saint-nectaire, gouda vieux, fleur du maquis, bergkäse aux fleurs sauvages, bleu de Termignon, fiancé des Pyrénées..
