Over thirty years in business and still going strong for Maison Balé, which has moved from local markets to this corner of rue de Nemours, a stone's throw from the central market. It's a fine selection of cheeses from all over France, respecting seasonality and championing fine affinages: comté 18-24 months, saint-nectaire, gouda vieux, fleur du maquis, bergkäse aux fleurs sauvages, bleu de Termignon, fiancé des Pyrénées..
