Sébastien Gruel, a worthy representative of a line of charcutiers-traiteurs (he represents the second generation), remains above all an ardent defender of the quality of the products he uses: Landes and Bresse poultry, in particular. While respectful of tradition, he doesn't hesitate to offer innovative preparations, such as his foie gras, white pudding and mango parfait, or his guinea fowl galantines with foie gras and fig chutney. He also delivers meals on wheels and has opened a second store in La Teste-de-Buch.
