From the lemon tart that won him the Grand Paris Concours de la Meilleure Pâtisserie 2023 to the daring entremets, the pastry chef makes everything 100% by hand. He applies the same philosophy to his natural and special sourdough breads, viennoiseries and chocolate bonbons, of which his pralines are emblems. His collections vary according to season and inspiration. And his creativity knows no bounds, as demonstrated by the astonishingly delicious pineapple-coriander combination that sublimates a unique entremets and the 150 suggestions he has created in 3 years.
