Butchery If Chez Marco, a family-run artisanal business founded 33 years ago, became known for the excellence of its butchery products, its reputation is now conquering the world of charcuterie. At the heart of this success is the founders' son, Jérémy Laurenti. Indeed, this artisan charcuterie maker delights the discerning palates of individuals and restaurateurs alike with remarkable "treasures". These include cured ham, lonzo, coppa, perugines, caillettes, chipolatas, merguez and sausages, including novelties such as garlic and fennel. All these products are homemade with meat from animals selected directly from Basque breeders, salted with dry salt and organic berries and spices, then matured naturally in our dedicated cellars. Hams aged 18, 24 or 36 months can be tasted and appreciated like an exceptional wine. "We also offer suckling pigs of all sizes stuffed with giblets according to the ancestral recipe of Nice," explains the young man, rich in this traditional know-how that only a handful of artisans have mastered.
