Butchery When it's busy in the store, don't hesitate. Just off the covered market, the little store that lives up to its name is in full swing from morning onwards. The butchers are practically cutting up the finest cuts of meat in the window. Farmhouse chickens, Bigorre black pork, Sojadam ham ("the real old-fashioned Paris ham", made in Paris using traditional methods, without colorants or preservatives)... all highlight a certain idea of quality.
