Matthieu Wacogne is a young charcutier, a 30-year-old former Best Apprentice in France from Normandy, who has been based in Dreux for a couple of years with his wife, Caroline. Boudin blanc (white pudding) is one of his most famous products, and he entered it in a European competition for which he was named champion of France in the category. You'll find it alongside his other in-house charcuterie products (foie gras, pâté de foies...) and butchery preparations. Everything is homemade by this enthusiast, who continually trains to find new ideas to accompany the traditional: cordon bleu with boursin cream, éclair with crab tartar and vegetables... We can only encourage him on a path that already seems well mapped out.
