The slightly stained color reveals a heady bouquet of rose perfume, rice powder and incense. The ripeness of the pinot meunier (the majority in the blend) is felt with a warm, pastry-like quality and stewed stone fruit. Pinot noir and Chardonnay energize this impression with aromas of acacia flowers and crushed raspberry. Beautiful tension on the palate, with a mineral, saline texture. Lemony notes add pep before a chalky finish. A lovely, classic Champagne.

In Baye, a village north of Sézanne, the Jacques family continues the work begun nearly a century ago by Gilberte and André. Over the decades, the estate has expanded and modernized, and Quentin and Bastien—the children of Rémi and Valérie—have gradually become the guardians of a tradition rooted in 18 hectares of Chardonnay, Pinot Noir, and Meunier, planted in equal parts. For example, the “Les Enseignes” cuvée is the result of their work, always under Rémi’s watchful eye. At the same time, the family recently acquired beautiful plots in Chouilly and Aÿ to produce, on the one hand, a 100% Chardonnay and, on the other, a 100% Pinot Noir.
