Here, the blend of years remains secret around the Pinot Noirs of Aÿ Grand Cru. In the glass, the bubbles are numerous, fine and fast. The nose is very pastry-like, with notes of rhubarb. The palate, despite its sweetness, is very taut, with a long, saline finish and beautiful bitters that give it a lovely freshness. The ideal cuvée to pair with a well-aged chaource.
