The pastry and viennoiserie aromas speak for themselves, underlined by notes of dried fruit, spices and vanilla. The palate changes course, with the gentle bitterness of kumquat rind, barely jostled by discreet bubbles. Sweetness then takes over, but the finish retains tension.
