Without his grandfather, André Jeanmaire, founder of the "Doquet" house in 1933 in Vertus in the Côte des Blancs, Pascal Doquet would never have become a winemaker. Now a harvester and handler, he opted for organic viticulture in 2004, setting himself apart from the now-defunct Doquet-Jeanmaire family business. Under his own name and structure, he produces champagnes from organically grown grapes. The vines, with an average age of 35 years, cover 8.66 hectares in the Mesnil-sur-Oger Grand Cru, Vertus Premier Cru, Bergères-les-Vertus, Mont Aimé and around Vitry-le-François in the Perthois region. On the Côte des Blancs, there are only two grape varieties: 95% Chardonnay and the rest Pinot Noir. Here, the grapes are harvested to the rhythm of the terroir, with the aim of reducing the use of copper and sulfur, replaced by more natural products, and with fermentation using indigenous yeasts to respect the identity of the wines. This work is reflected in the glass, often with substance and pleasure.
