The nose is perfumed with hints of licorice, fig, morello cherry and even a touch of smoke. On the palate, the wine's attack is fresh, with a powdery grain of tannin. The finish is long and spicy, and the ageing in amphora gives it plenty of freshness.

Mas de Clanny
Jérôme Vaillé's family has been working with vines for four generations, but it was in 2000 that he decided to take the plunge, after a career as a draughtsman in a design office. He worked a few vines in Saint-Félix-de-Lodez using organic methods, with the vats in his garage. In 2015, Mas de Clanny was created. In 2020, a winery is built and, in 2023, his wife Olivia joins him. They produce several wines in the terrasses-du-larzac and languedoc appellations.
