The bubbles are both fine and energetic for this champagne, half of which is reserve wine from vats renewed every year since 1996. The particularly appetizing nose is reminiscent of dried apricots and pastries, while the palate, with its slightly toasted notes, is reminiscent of toast. Serve with poultry supremes with morel mushrooms.
