Winery presentation by Gault&Millau
This family-owned estate, based in Verzenay (Grand Cru), is run by Paul Froissart, who took over the business from his grandparents in 2016, the year he produced his first vintages. He represents the sixth generation of winemakers at this 5-hectare vineyard, whose champagnes are crafted from meticulous plot-by-plot selections. Grass cover between the vine rows helps keep the soil alive, while shallow plowing renews this vegetation cover. With winemaking carried out entirely in barrels, amphorae, or stainless-steel tanks, the cuvées preserve the minerality of their terroirs.
