Lady Dolan is the brand of the Crolière cooperative, the smallest in Champagne, created in 2012 by a group of former students of the Gionges viticulture and oenology school. The champagnes are made with grapes from the school's own vineyards, with additional contributions from those of former students. The vineyards are located in the Grande Montagne de Reims, the Marne Valley, the Côte des Blancs, the Sézannais and the Coteaux Vitryats. Cellar work is carried out by the students under the guidance of Pierre de Groote, cellar master and teacher.
