L'Austral was born of a dream of freedom and discovery. After graduating in 2011, Pauline and Laurent, originally from Brittany and Savoie, left their traditional careers for a trip to Australia, where they worked on farms. There, they met Australian oenologists and launched themselves into the world of wine. Pauline trained in oenology in Dijon and worked at Domaine Mélaric. In 2016, thanks to Françoise and Philippe Gourdon, they took over 4 hectares of biodynamic vines in Puy-Notre-Dame. Today, they farm 6.5 hectares organically.
