Gault&Millau's review
The estate farms just under 9 hectares in the Petit Morin valley, whose hillsides are ideal for growing chardonnay and pinot meunier. Nathalie and Jean-Michel Noiret, the eighth generation of winegrowers, launched their brand in 2003, and the wines are vinified in three different cooperatives so as not to distort the historic cuvées produced by their forebears. Since 2011, biodynamic viticulture has been tested on all their plots to rebalance the plant life of the vines, and the organic viticulture charter is scrupulously respected, with the soil worked by draught horse. Their cuvée "3 Symboles", made "in the process of the rhythms of time", sums up the estate's philosophy.
