After the death of Pierre Cheval, a major contributor to the Unesco classification of Champagne's landscapes, it was Louis Cheval-Gatinois, representing the twelfth generation, who took over the 7 ha spread over 27 parcels of vines in Aÿ in 2016. Here, Pinot Noir is the star of the show, giving full-fledged structure to the champagnes, generally offering a relatively vinous, full-bodied style with ripe, clean fruitiness, perfectly enhanced by the choice of light dosages.
