Produced from the best plots in Celle-sur-Ours in the Aube region, this blanc de blancs is an invitation to plenitude: a magnificent brilliant silver color with green reflections, scattered bubbles teeming with deliquescence, a delicate nose of subtle perfumes around white fruits, exotic fruits, dried fruits and Savoy cookie. The full-bodied palate wanders between citrus zest and fresh brioche, ending with a saline, chalky finish. Open as an aperitif or with a duo of monkfish and pike-perch with wild asparagus.
