75 months ageing on lees for unparalleled complexity. It has a light beeswax note and subtle hints of yellow fruit, all the while retaining its pep and energy. Very delicate, lacy, but so long! The finish lingers on cigar and a hint of tobacco, apple and pear. A langoustine ceviche or baked sea bream will do the trick.
