Winery presentation by Gault&Millau
Paul Chereau, a math teacher with a passion for wine, launched his winemaking career in 2014 after spending two years training with a winemaker in Gaillac. After his first winemaking efforts in 2016 in his garage, the first 6,000 bottles were released in 2017, followed by new vintages, including a “pet’ nat’.” Together with his partner, they started with 3.5 hectares of small plots in Castelnau-de-Montmiral and are moving toward biodynamic farming, with hand-harvesting and sheep in the vineyard. In the winery, they use native yeasts, minimal intervention, and very few sulfites. In total, they now cultivate 6 hectares.
