Winery presentation by Gault&Millau
Pierre-Olivier and Pauline Laurent took over Pierre-Olivier’s family estate, Domaine de Cantalauze, which has been certified by Nature et Progrès since its inception in 1982. It spans 9 hectares of vineyards perched on a limestone plateau at an altitude of 300 meters, between the Pyrenees and the Massif Central. Surrounded by woods and meadows, Pierre-Olivier and Pauline cultivate biodiversity, living soils, and Gaillac grape varieties harvested by hand. The wines are crafted through spontaneous fermentation with native yeasts, fully revealing the terroir and vintage. A place steeped in history and experimentation, the estate carries on the pioneering spirit of the Laurent family, committed to ecological farming and authentic winemaking practices. The cave-like winery welcomes visitors and curious guests to explore the vineyards and winemaking processes, but above all to experience the unique spirit of Cantalauze.
