The nose, ripe and greedy, attests to both the ripeness of the grapes and the wine offered after 6 years of cellaring, 3 of which on laths. On the palate, fine bubbles accompany rich fruit and a limestone structure characteristic of Aube's Kimmeridgian terroirs. Serve with a puff pastry of white pudding with Chaource cream.
