Ten years of ageing in the cellars before disgorgement has given this Vintage fine bubbles and a complex nose of orange zest and candied citron (“cédrat"). The palate is silky and saline, developing great bitter notes on the finish. Appreciated for its delicate texture, more than for its aromatic complexity, this champagne will happily accompany a fricassee of lobster in cream, deglazed with ratafia.
