A strange name for this cuvée, which takes its initials from the first names of the winemaker's children, Octave, Zoé and Éloise. The very creamy nose evokes custard, an enchanted orchard where peach, cherry and wedge share the aromas, before sweet spices (turmeric, coriander, cardamom and nutmeg) add extra pep on aeration. The palate is fresh and energetic, with flattering bubbles. Notes of ripe fruit and fresh coffee. Small bitters titillate the palate on the finish and make you salivate.
