Gault&Millau's review
Run by Florence Bauchet Labelle, with the help of her younger cousin Robin, the estate has 34 ha of vineyards, including 10 ha on the Côte des Blancs (Chardonnay) and the Montagne de Reims (Chardonnay and Pinot Noir), and 24 ha on the Côte des Bar (Pinot Noir), in the Aube region, spread over five terroirs. The estate is certified HVE (haute valeur environnementale), VDC (viticulture durable en Champagne) and has been in organic conversion for two years. The champagnes, straightforward and racy, wait two to five years in the cellar, with disgorging taking place throughout the year, and are only sold six to eight weeks after this stage, to give them time to stabilize.
