Winery presentation by Gault&Millau
Aurélien and Stéphanie Raymond are busy on all fronts. On one hand, they manage the Raymond & Fils Champagne estate. On the other, the recent development of a line and a brand under Aurélien’s name, which sets itself apart from the family estate through its organic approach. Thus, Aurélien and Stéphanie have dedicated 2.3 hectares to the production of two cuvées. The first is a 100% Chardonnay, partially aged in oak barrels. The second is a blend of Pinot Noir and Meunier from the Marne Valley, barrel-aged and vinified as “extra-brut.”
