The blend of 80% pinot noir and 20% chardonnay offers a beautifully expressive nose of stewed white fruit, spices and a hint of aniseed. The whole is seductive. The palate is pastry-like, with chalky, salivating chew and a spicy finish. An aperitif champagne to be served with oysters in sabayon sauce.
