Domaine Bonnigal-Bodet is located in Limeray, near Amboise. Jean-Baptiste Bonnigal and Stéphane Bodet have embodied the 4th generation since 2015. The 40-hectare estate offers a rich geological heritage to accompany local grape varieties. Chenin, côt, sauvignon and pineau d'Aunis are grown organically and biodynamically.

"Nothing is impossible to a valiant heart Jacques Cœur's maxim sums up the vision of the Maison Bonvalet. Pauline and Guillaume Bonvalet didn't inherit any vines, yet they made their dream come true, starting from nothing and building everything. The house was born in 2012 under Guillaume's impetus. The first bottles leave the cellar in 2014, after two years of aging. Determined to shake things up, demystifying Champagne, they reveal a little of its secrets, make it accessible and produce beautiful wines. Pauline and Guillaume Bonvalet work together to develop the range and image of their champagnes, combining the pursuit of the highest quality with the expression of terroir.

Bordaxuria is first and foremost a "Larraldea" farm, of which viticulture is just one activity. The members of the Reca family are both polycultivators and polyproducers, raising sheep and cows and producing cheese, meat, jams, apple juice and wine. With 9 hectares of terraced vineyards on Mount Arradoy, facing Saint Jean-Pied de Port, the estate offers wines in all three colors. Initiated less than 10 years ago, the production of half white and half red has been organic since 2015, and the wines are now well recognized by critics and the appellation's faithful. Brice and Elorri welcome you by appointment only.

Bouché Père & Fils

This family business has been established in Pierry for four generations. Founded by Abel Bouché in 1920 with a single hectare, it now operates a 30-hectare vineyard spread over nine Champagne villages. This geographical spread (much of which is Premier Cru and Grand Cru) lends the range an aromatic complexity due to the diversity of soils and climates. The current owners, José and Nicolas Bouché, continue to respect the family spirit that reigns in the bubbles of their champagnes. Vinification takes place in temperature-controlled stainless-steel vats, and bottle ageing lasts between four and ten years for the seven cuvées in the range. The estate welcomes you free of charge.

Mainly focused on Pinot Meunier (85% of the estate, 10% Chardonnay and 5% Pinot Noir), the Bourdaire-Gallois family business is based in Pouillon, in the Saint-Thierry massif, the northernmost part of the appellation. Robert Massonnot, the grandfather of current owner David Bourdaire, started out in agri-business. In the 1950s, he and three other winemakers founded the local cooperative to market their first cuvées. David left the cooperative in 2001 and built his own press the following year, from which, together with Véronique Bourdaire-Gallois, he produces various cuvées as an independent winemaker.

Jérôme Bourgeois-Diaz has presided over the estate's destiny since 2000. From a family that has been making champagne for four generations, he oversees almost 7 ha, including 3.5 ha of Pinot Meunier, 2.5 ha of Pinot Noir and 1 ha of Chardonnay. The plots, on predominantly clay-limestone soil, have an average age of 35 years and have been biodynamically farmed since 2009. Every precaution is taken to maximize the quality of the grapes, and the domaine's motto fits well with the wines we taste here: "Wine is not chemistry, but alchemy". Superb, they are vinified in stainless steel vats, oak barrels or clay and concrete vats, depending on the profile of each vintage.

The family business farms 6.4 ha, the majority of which are leased. The plots are located on the Villers-Marmery terroir, a cru highly regarded by wine merchants, and are planted with 97% Chardonnay. Pinot Noir is used only for blending rosé wines for maceration. The domaine uses sustainable viticulture methods and offers a limited range of champagnes at reasonable prices. White champagne, rosé and ratafia champenois are sold at the domaine.

Pol Briaux and Christian Lenique created the Briaux Lenique champagne brand in 1965. After almost fifty years in business, they passed the reins to their daughters, Nathalie and Stéphanie. The estate is located on the clay-limestone slopes of the Marne valley around the village of Mardeuil, 3 kilometers from Épernay. The 4-hectare vineyard comprises 21 plots, half of which are planted with Pinot Meunier, 30% with Chardonnay and 20% with Pinot Noir. The range comprises five cuvées.

Descended from a line of winegrowers dating back to the 17th century, Rémi and Jean-René Brice cultivate the family's 12 ha of vineyards. Surrounded by Christophe Constant, oenologist and production manager, they produce champagnes rooted in the Bouzy terroir, which is classified as a Grand Cru. Particular care is taken throughout production, and the harvest date, which is crucial to the balance of the grapes, is often pushed back to the earliest possible date. The company is particularly involved in the recognition of the Champagne hillsides, and in 2023 achieved its first certified organic harvest.

Since 2008, Brigitte Beaufort has been meticulously crafting her 14 parcels spread over 4 hectares, all certified Grand Cru (Bouzy, Ambonnay and Tours-sur-Marne). The proportion of blends varies according to the harvest, to produce dense, ripe and precise microcuvées, all from the same vintage. A new step was taken in 2022: the bottles are branded with his own name, numbered, with the composition of the blend, date of disgorgement and dosage, and the initials of his children's first names (Anne-Louise and Pierre-Herbert) are now included in the name of each of his cuvées. A red Bouzy completes the range of champagnes.

Bruno Michel

Bruno Michel created this 12 hectare estate in 1985 in Pierry, a town 2 km south of Epernay, together with his wife Catherine. Since Bruno's untimely passing two years ago, the domain is now run by his daughter Pauline and her husband Guillaume Orban the Chef de Caves. Half is planted half with Chardonnay (including a parcel classified as premier cru), 40% Meunier, and the rest Pinot Noir. The couple's desire to respect the environment resulted in organic certification in 2004, using cover crops, green harvesting, composts, and herbal teas and plant concoctions to treat vine diseases. All of their champagnes are aged in tanks.

Bruno Paillard has brought quality and reputation to this house, founded in 1981. From the outset, he has produced top-of-the-range champagnes, characterized by long ageing and low dosage. Today, his own vineyards cover 25 hectares, including 12 grands crus, which account for around 60% of his production. In 1983, the company became the first to indicate the date of disgorgement on all its wines, after imposing a long resting period in the cellar. A few years ago, Alice Paillard, Bruno's daughter, took over as head of the brand. She works alongside Laurent Guyot, cellar master for over thirty years.

The company has been established in Ludes since 1847. Today, the vineyard covers 9 hectares on the Montagne de Reims and in the Marne Valley. It is the rising generation of Raphaël and Vincent Bérêche who have propelled the production to the forefront of winemakers' champagnes sought after by discerning connoisseurs around the world. Everything is done in the vineyard, as well as in the cellar, to sublimate the terroir and the wines, all of which combine formidable maturity and minerality.
