This is a table to follow and to frequent assiduously: a true chef's work, committed to promoting his terroir, and his menu is both faithful and personal. We start with a little kintoa, followed by the chef's idea of pulled pork, with steamed Basque pig brioche, shellfish nage with a tatin of vegetables of the moment and sabayon, and tarte amandine with Adour kiwi for dessert, in a pleasant, insider's atmosphere.
