Chef's Restaurant The brand name is a promise of fresh, invigorating, incisive cuisine. More than a promise, it's a reality! Baptiste Lavallez, an experienced thirty-something, and Laura Boit, who came to pastry-making by the back door, have taken over a former pizzeria in a small, strategic town square. Large windows provide plenty of natural light. White walls and ceiling, light-colored floors and flowing furniture (including pretty wooden tables) all contribute to the warm atmosphere of the place. On this particular day, the ceviche sea bass, happily combined with herbaceous and aniseed flavors, provided a slender, vegetal and marine appetizer to great effect. The next course offered a broad palette of flavors, from the beautiful sea bass steak to the fiery white asparagus, the thin slices of pickled beet and the delicious, delicately smoked beurre blanc. The whole is punctuated by touches of basil and sorrel. As for the poultry, perfectly cooked and underlined by a frank, delicate creamy jus, it keeps the gustatory attention at a good level, all the more so as a few notes of coffee add a very interesting extra dimension. The final - extremely light - variation on hazelnut and barley confirms all the good things we think of this young house. The service is cheerful and relaxed, and the short wine selection is based on solid values at prices in line with the menus: Côtes-du-Rhône from Domaine La Réméjeanne and Domaine Coursodon, Côte-Roannaise from Domaine Sérol, Chinon "Les Grézeaux" from Bernard Baudry...
