Gault&Millau's review 2026

Another attempt at Italian cuisine with this Vinello at Christophe Pelé's old address. A modern take on Botte, with no exclusivity, which does as much vitello with tonnata mousse and veal jus as it does tuna crudo with beet, horseradish and quinoa, adds kale to clam tagliatelle and chooses Iberian pluma with Jerusalem artichokes and salsify.
