This is Mont-de-Marsan's most beautiful house and now one of its finest hotels, a sublime 1912 building at the confluence of the Douze and Midou rivers. This Belle Époque gem was taken over in 2014 and now offers a 4* experience in a superbly renovated setting, where Philippe Lagraula's cuisine can finally be found. The latter pays tribute to the South-West with a remarkable tasting menu, featuring trout and zucchini flower with beurre blanc, the famous Saint-Jean-de-Luz hake with ttoro juice and shrimp brioche, pigeon with dill and green asparagus, and the sweet "nuage Mirasol" with armagnac and coffee. Impeccable service.
