On the edge of town, Dominique Moreaud has set up his application restaurant, where young graduates of his training center can come to sharpen their claws and prove to themselves and others the fine talents they have honed. The menu features a range of fine bistronomy dishes, such as pressed zucchini, potatoes and salmon trout with herb mousseline, grenadier fillet with bouillabaisse sauce and Thai rice, or roast poultry with lemon thyme jus.
